Da Nang Banh Beo and Banh Uot – Rustic Local Dishes

For a long time, bánh bèo and bánh ướt have become familiar dishes in the daily life of Da Nang people. Without being elaborate in ingredients or preparation, these two dishes still win over diners with their rustic simplicity and distinctive rich flavor. Da Nang people can eat bánh bèo and bánh ướt at any time of the day, from main meals to snacks, and these dishes seem suitable for all ages.

Bánh bèo in Da Nang comes in many types, distinguished by shape and way of eating. Tiny ear-shaped bánh bèo are about the size of an earlobe and are usually arranged on a plate, preferably a tin plate for the proper style. Bánh bèo chén is steamed in small round shallow bowls. As for bánh ướt, it is presented on a plate and cut into bite-sized pieces. Although different in appearance, all share one common point: the surface is always sprinkled with a layer of topping – or as Da Nang people familiarly call it, “nhưn”.

That “nhưn” is exactly the factor that creates the dish’s special appeal. The topping is usually made from shrimp or fish, with the meat removed from the bones, then seasoned and dried over charcoal until fragrant and no fishy smell remains. Therefore, when eating, diners only feel a light nutty and slightly rich taste that is nevertheless very attractive. In addition to this dry topping, there is also a type of “wet topping” made from lean meat, wood ear mushrooms, and other ingredients, creating a thick mixture with an attractive bright orange color that makes the dish richer and more diverse. Bánh bèo is also often served with fermented pork roll and spicy beef sausage, while bánh ướt can be eaten with pork sausage, enhancing the flavor of this rustic dish.

However, to judge whether a plate of bánh bèo or bánh ướt is truly delicious, the most important thing is still the accompanying fish sauce. The fish sauce for bánh bèo is not too elaborate, consisting simply of fish sauce diluted with cooled boiled water, plus minced garlic, chili, a little sugar, and a few drops of lime juice. Yet that very simplicity creates a mildly sweet and lightly sour taste distinctive enough to highlight the flavor of each piece of cake.

The image of diners sitting around a street vendor’s stall, eating and exclaiming, occasionally tilting the plate to ask for more fish sauce or squeezing in a little more lime, has long become a familiar scene in the life of Da Nang people. It is not only a way of enjoying food but also part of the simple and beloved memories of the streets here.

Today, it is not difficult to find shops selling bánh bèo, bánh ướt, and bánh lọc on any street or small alley in the city. Even when staying at a hotel, visitors can still easily enjoy these rustic dishes. In the afternoon, just stand on a breezy balcony and listen to the familiar cry of street vendors: “Bánh bèo, bánh ướt here…”, and you can immediately order yourself a plate of hot, fragrant, and richly flavored Da Nang cakes.
